Germany's reputation rests above all on Riesling, a grape that runs from bone dry to lusciously sweet while keeping piercing acidity. The Mosel is famed for steep slate slopes and delicate, filigree wines; the Pfalz, further south and warmer, gives fuller, riper expressions. Cool-climate ripening is central to the German style.
